13 SUSTAINABLE DINING The food we eat and where we get it aren't just questions that concern consumers—in fact, our dining choices can dramatically impact environments around the world. Working with Sodexo Campus Services, the School of Education presented "Saving the Planet– One Bite at a Time" in the Atrium at Eickhoff Hall. The event featured a special menu of local and sustainable foods. Information placards on each tabled served to educate the campus community on how better eating habits and a fresh food focus can create healthier and more sustainable lifestyles. FROM WOODSTOWN TO THE WHITE HOUSE In October, the New Jersey Education Association declared Chelsea (Koerner) Collins the 2015–16 New Jersey State Teacher of the Year, prompting a meeting with President Obama at the White House. Collins, who earned her Master of Arts in Teaching degree from the college in 2011, has now served four years at Woodstown Middle School teaching sixth-grade English. She also coaches the field hockey team, is a co-advisor for the Pawprints Yearbook, advises the STAND program, and is the sixth grade team leader. Topics included expanding course-integrated research options and growing green initiatives in the classroom.
